Banana Oat Chocolate Chip Muffins

The new season of The Great British Bake Off started this week! So what better time to get up to a little baking of my own :D

Those who know me can attest to the fact that I have a huge sweet tooth. I absolutely LOVE chocolate!! (I mean, who doesn't, right :D) But in recent months, I've become more interested in what food I'm putting in my body, and what those ingredients fuel. So when I came across this Banana Oat Chocolate Chip Muffin recipe on Allrecipes, a healthier twist on your usual Banana Chocolate Chip Muffin, I just had to try it!

Made with whole wheat flour, rolled oats, skim milk, bananas and unsweetened applesauce (for the full ingredients list, click on the Allrecipes link above), they were absolutely delicious! And disappeared so quickly ;)

I substituted the semi-sweet chocolate chips for dark chocolate chips (Sainsbury's Taste the Difference Dark Chips), and because unsweetened applesauce is hard to come by in UK grocery stores, I made my own.

Say what now?!

You heard me. And it was sooooo unexpectedly easy! Click here for the recipe (note: as I was using the applesauce as part of another recipe, I didn't add the suggested cinnamon or vanilla essence listed).

Also, I came upon a great tip from Food & Wine's Justin Chapple on how to quickly ripen bananas for baking (mine never seem to be ready when I want to bake). Heat the oven to 180C (fan oven), put two bananas on a lined baking tray, and place in the oven for five minutes. When you remove them, the banana skin will have blackened. And voilà, you're left with ripened bananas, ready to use!

For a beginner baker like myself, this recipe was fun, easy to follow and tasted amazing! Perfect to grab on your way out to work, or wherever else the day takes you.
